Dan Doherty is Group Executive Chef of London’s acclaimed 24-hour restaurant Duck and Waffle – and a massive name in the food world. He’s hosting one of Manchester Food and Drink Festival’s Hidden Banquets which is, as far as we are aware, the first chance for Mancunians to try his top end British comfort food on home turf. Guests at this special event entitled ‘Industry’ will enjoy a special meal, created with Manchester’s industrial heritage in mind as well as a tour of the historic Old Granada Studios building complex, including the Grade II-listed Bonded Warehouse. The banquet will be held on the lofty top floor of the Warehouse and a tour by Blue Badge guide Jonathan Schofield (currently one of the featured voices on Radio 4’s The Matter of the North) is included in the price. He will be talking guests through the historical significance of the building, while Doherty serves up a banquet. The menu is TBC – but would-be diners can get a feeling for Doherty’s game-changing style via his London restaurant menu which includes spicy ox cheek doughnuts with apricot jam and smoked paprika sugar and crispy duck leg confit, fried duck egg with mustard maple syrup (aka Duck and Waffle). His second cookbook Toast Hash Roast Mash: Real Food for Every Time of Day is out now.
