Acclaimed chef Niall Keating is set to launch a new concept at Manchester’s Stock Exchange Hotel.

Keating, one of the UK’s youngest ever two-time Michelin Star chefs, will open Tender within the dining area of Gary Neville’s five-star hotel.

Described as a ‘family-style brasserie that blends tradition with innovation’ Tender replaces the Stock Market Grill which had operated in the space last year.

Speaking about the new opening, Neville said: “We have been looking for the right partner over the last year and from our first conversations with Niall we were excited about what we could create. He is one of the youngest awarded two-time Michelin star chefs and I’m excited to be bringing this venture to life alongside Niall and his team.

“The brasserie has been named after the ‘Tender’ care put into crafting each dish and is a nod to the heritage of Stock Exchange Hotel and I can’t wait for you all to experience Niall’s vision and the hard work of all the teams involved in bringing Tender to life.”

Keating’s two Michelin Stars came during his five-year stint at Whatley Manor in Wiltshire, and he more recently launched Lunar at the World of Wedgewood in Staffordshire. In 2020, the celebrated chef was also crowned Champion of Champions on the Great British Menu.
