It was once home to iconic telly pub the Rovers Return but now Old Granada Studios plays host to a brand new venue helmed by Manchester’s first distillery, Zymurgorium. These purveyors of fine locally-made gins and vodkas are due to unveil their blues-themed basement space Project Halcyon bar on Friday 31 January 2020, taking over and transforming the lower floor of Bonded Warehouse, itself a grade II listed building. So far, little is known about this exciting new venture other than the scant selection of images released on the venue’s Instagram and website which tease a rustic and chic vibe, complete with cosy low-lighting and speak-easy aesthetics. The project was born following a collaboration with Zymurgorium owners Aaron and Callum Darke and former Whiskey Jar and Liars Club general manager Rory Bourke and looks set to offer the perfect after-work spot for visitors to indulge in a few cocktails infused with locally crafted tipple. In addition to its craft beer and liquor offering, Project Halcyon also aims to serve up a seasonal food menu alongside a selection of cocktail masterclasses and intimate spirit tasting events. Plus – if visitors find their new favourite rare or obscure liquor during their time in the bar, the venue’s ‘store and pour’ policy will let them buy it, squirrel it away and revisit it during their next visit.
