Local food sustainability champion and The Gallery Café chef Mary-Ellen McTague is joining forces with The Wild Beer Company and Cave Direct wholesalers to create a four-course seasonal menu, paired with four selected Wild beers this Thursday. The first course combines Sleeping Lemons Gose beer with scallop ceviche, bisque and roasted corn, followed by nutty, warming beer Rooting Around Autumn alongside wild mushrooms, birch powder, snails and malt loaf. The third course leads with double-aged Beyond Modus brewed in Burgundy red wine barrels, paired with a main of venison pasty, barberries, celeriac and truffle. To finish, Wild’s celebration beer Ninkasi with flavours of apple, New Zealand hops and champagne fermentation will accompany quince, brioche and Dale End cheddar.
