This August, artisan food vendors Fire & Salt BBQ Co is running a crash course in barbecue skills. Taking place at Cook:Manchester, a professional kitchen unit in Old Trafford, this intensive six-hour course will give attendees a grounding all aspects of barbecue cooking. The programme incorporates information on how to run a ‘smoker’ – including cooking times, temperatures and choosing the right wood. The cooking of popular barbecue foods, such as pork shoulder, ribs, brisket and chicken will be demonstrated during the day-long sessions. Also up for discussion will be the use of rubs, marinades and sauces. Tasters will be provided throughout the day and there will a meal at the end, where attendees can try all of the foods covered on the course.
