The 6 tapas dishes are: Fresh Scallops with peppered cauliflower puree Fernando de Castilla, served with Fino; Squid in fennel and coriander seed tempura, served with Fernando de Castilla Manzanilla; Peppered duck breast seared with balsamic reduction, served with Fernando de Castilla Amontillado; Glaician spiced Ox tail, served with Fernando de Castilla Oloroso; Pork Filletitos with caremelised onion, served with Fernando de Castilla Palo; Cortago Poached spiced pear with star anise and finest vanilla ice cream, served with Fernando de Castilla Pedro Ximénez.
