New Century has welcomed a brand-new independent street food trader to its ranks.

Wilson’s joins the likes Fricken, Ply Pizza Loves You, Banh Vi and Koi Fusion, and will offer speciality sandwiches, burgers, birria tacos and inventive small plates.

The burger and sandwiches menu features a mix of delicious treats including classic beef burgers, double smashed patty on brioche, Philly cheesesteak and a salt beef sandwich with burrata and gremolata.

The signature birria tacos are a rich medley of beef shin with melted cheese, onions, coriander and house-made pico de gallo and consommé. There’s also homemade butters and sauces for smothering on seasoned skin on fries with options including cowboy butter, confit garlic and sage, and chimichurri.

A considered collection of sharing plates is designed to complement the menu and bring a feast to the table. Deep-fried roast potatoes are topped with chorizo, feta, roquito peppers and garlic, or fresh house-made salsa verde, red onion, and feta. There’s also charred corn on the cob with soured cream, feta, chilli and lime; padron peppers with Maldon; and homemade onion rings.
