Salvi’s Mozzarella Bar & Restaurant in the Corn Exchange has introduced a selection of sweet and savoury dishes incorporating Heavenly Honey from the neighbouring Manchester Cathedral. Available on the restaurant’s specials menu, options include beetroot ravioli, filled with ricotta and honey, and served in a roasted pine nut, honey and pancetta sauce, as well as Parma ham accompanied by figs and honey, plus a bruschetta with gorgonzola and honey sauce. For those with an even sweeter tooth, the classic Italian dough ball dessert Struffoli, which comes drizzled with honey and a sprinkling of sugar, is also available on the restaurant’s Christmas menu. Heavenly Honey, which is sourced from beehives on the rooftop of Manchester Cathedral, is also available to buy to take away from Savli’s Corn Exchange deli. Proceeds from the honey help to raise funds for the Cathedral’s volunteer project Volition, which aims to support unemployed people in the city. Like the sound of this?
