A new vegan pasta restaurant has opened at Manchester’s Royal Exchange.

Following success in London, the team behind Pastan have now brought their completely plant-based menu to the North.

The menu features various handmade pasta dishes and delicacies, made with premium ingredients – cooked in full view of diners. Diners can expect vegan takes on favourites such as Dolce Vita (vegan carbonara), Green Velvet (a pea and shallot ravioli dressed in a salsa verde) and Catalonia (black cavatelli pasta made in a rich tomato sauce, spiced with apricot harissa and rosemary), plus sides of Loaded Gnocchi.

Pastan’s fully vegan menu will shift according to the season and adapt in line with customer feedback. It will also incorporate new and exciting ingredients from the plant-based leading industry from brands such as ‘THIS’, Fable and Heura, which feature heavily in their dishes.

Pastan has also partnered up with Carbon Free Dining, an environmental initiative operated in partnership with Sustainably Run Restaurants which gives restaurants and their diners the opportunity to mitigate the environmental impact of their meals by planting life-changing fruit trees in the developing world.
