The group behind Schofield’s, Atomeca and Sterling have announced their first restaurant venture, taking over the former Bull and Bear site within the Stock Exchange Hotel.

The Stock Market Grill, which will open on Wed 1 Mar, is described as a British Brasserie, with touches of elegance from continental Europe, all served with homely and comforting flavours from the UK.

Head-Chef Joshua ReedCooper will be at the helm when the restaurant launches. His impressive CV includes working for Simon Rogan at The French, Sam Buckley at Where The Light Gets In and Manchester’s only Michelin-starred restaurant MANA, where he helped the team achieve their esteemed accreditation. 

Diners can expect traditional, well-loved British dishes executed with technique, using local, high quality produce. The bespoke menu for launch will include dishes like: Oysters with Mignonette, Westcombe Cheddar & Smoked Anchovy Straws, Chicken Liver Parfait with Sauternes Jelly & Sourdough Toast, Mussel Cullen Skink and Wild Mushrooms with Confit Yolk & Spelt.

Elsewhere on the menu will be more substantial servings like Rabbit Suet Pudding with Mustard Cream, Tranche of Brill with Borderlaise & Grilled Onion, Mangalitsa Pork Chop with Yorkshire Rhubarb Ketchup and Ex-dairy Rib Eye with Brown Butter Jus & Lemon

Joe Schofield said: “We aim to create one of the best restaurants in the North of England, right here at Stock Exchange Hotel which is a natural next step in our hospitality career. Using the core pillars of our brands, we will transform the former Trading Floor into a space destined for food and drink lovers, whilst providing an expectation-exceeding experience for the residents of the hotel.”
