Patron is a self-proclaimed ‘modern take on a great British boozer’. Occupying the Northern Quarter’s newly renovated Hilton Chambers building, the connecting space features a garden courtyard while Roman Farahani (Hawksmoor, CAU) is head chef, in charge of a menu of British classics by way of the Middle East. Small plates are a thing: grilled mackerel with spiced pomegranate salsa, black pepper tofu, black garlic and chilli short ribs with smoked swede, Malayan pork belly, yuzu and green papaya and much more. Heartier options include a whole, glazed spatchcock chicken with shirazi (Iranian tomato and cucumber salad), and, in true ‘British boozer’ style, a proper Sunday roast complete with seasonal veg and yorkshires. We like the sound of the saffron, rose, yoghurt and pistachio baked Alaska for pudding too. Swill the lot down with a pint from the extensive international beer selection, or go local as most of the Manch micro-breweries will be in the The Patron’s line-up.
