Rebranding a body of time in a celebration of goat meat is a campaign we can get behind. To highlight the importance of using male billy goats who are seen as a waste product of the goat milk industry, restaurants have committed to adding a goat dish to their menus in October. And The Koffee Pot is going one step further. As part of Manchester Food and Drink Festival, Grafene’s Darren Goodwin, Manchester Art Gallery Café’s Mary-Ellen McTague, Hispi’s Richard Sharples, and Cabrito Goat Meat’s James Whetlor (pictured with his kid) are cooking a four-course menu, showcasing kid goat meat or dairy in every dish. There will be snacks of air-dried goat ham and hay-cooked goat shoulder before moving onto a starter of kid goat breast with cabbage, gooseberry and mussel dressing. The middle serving is traditional (and excellently named) dish Cabrito al Disco, followed by a main of kid goat and salt baked celeriac ‘lasagne’ with smoked Peakland White custard and pickled roots. Dessert rounds things off by way of a sambocade (medieval cheese tart) with goat milk sherbet and elderberries.
