The Laureate restaurant at Manchester’s Hyatt Hotel has launched a brand-new menu, shaped by family-favourite recipes shared by the chef team.

Head chef Manash Kolaparth-Muthuvana called upon his team to create their favourite recipes to trial as house specials, some of which go as far back as three generations. 

After being met with rave reviews, an entirely new menu has been crafted featuring a hand-picked selection of mouthwatering dishes that pay homage to the vibrant, eclectic, international influences the team bring to the restaurant.

Sous Chef Vikas has two dishes on the new menu, each of which proudly showcases his Indian roots — a prawn biriyani, served with traditional Indian Kaima rice, and the satay chicken supreme.

Joy, a self-professed home cook who comes from a family of chefs has created a fragrant Thai green chicken curry which is made using home-grown Kaffir leaves, ensuring it gets grandma’s seal of approval.

Originally a butcher, Syrian-born Abd is responsible for both the new mezze and the Arabian mixed grill sharing platter. Abd uses his expertise to bring out the very best in the chicken shish tawook, beef kebab and lamb kofta that make up the platter, which is accompanied by homemade Moroccan Khobez bread.

Head chef, Manash said: “Our team have a passion for creating dishes influenced from their past and we are honoured to have some of their families’ secret recipes feature on the new menu.  They are packed with flavour, melt-in-the-mouth meats and all made with the exact ingredients using traditional techniques from the past.  When we trialled the new dishes, we were overwhelmed with the feedback and just know that they are going to be a big hit with diners who stay with us and for those who live or work locally to the hotel too.”

The new menu features three appetisers, a choice of six starters, sharing platters, grills, seven mains, Sourdough pizzas and home-cooked desserts. There is also a diverse choice of vegetarian and vegan dishes, meaning there is something for everyone with the new menu.
