Japanese-Peruvian restaurant Chotto Matte is set to open a rooftop restaurant in Gary Neville’s new St Michael’s development in Manchester.

Specialising in Nikkei cuisine — a blend of Japanese and Peruvian culinary traditions — this will mark the venue’s first UK spot outside of London.

The restaurant will feature a selection of bold graffiti-style murals in partnership with a local artist, a 348-capacity roof terrace accessible all year with panoramic views across Manchester, open sushi and robata counters, two large private dining rooms and immersive lighting that evolves from day to night.

The 502-cover restaurant will also see an extensive menu designed by Executive Chef, Jordan Sclare, who has travelled extensively to Peru to sample local Nikkei cuisine and culture, combining both Japanese techniques with Peruvian ingredients.

Signature dishes include Sea Bass Ceviche, Nikkei Gyoza, Sato Maki Roll and Pollo Den Miso (miso marinated chicken with carrot, daikon and yellow chilli yogurt). The famous Black Cod Aji Miso will also feature, as well as King Oyster Mushroom Tostadas consisting of pulled mushroom, smoked Aji Panca, guacamole, lime, and coriander.

Chotto Matte Manchester will also offer a curated cocktail list, including reimagined classics, exclusive Manchester serves and Nikkei-inspired creations, as well as a live music schedule across every weekend, with further details to be shared closer to launch.

Working closely with Gary Neville and Relentless Developments, I knew the St Michael’s site was exactly what we were looking for as soon as I saw the plans. What Gary has created is vibrant, bold and sophisticated, everything we are as a brand. We are really looking forward to launching and taking over one of the most beautiful roof terraces in the city whilst bringing our new Nikkei dining concept to Manchester.

Chotto Matte Manchester will open in early October, and follows locations in London, Doha, Toronto, San Francisco and Riyadh.
