New restaurant and bar, Impossible Manchester, has just opened – with a bar within the bar called Ginpossible that’s all about gin. Located on Peter Street, the menu offers a range of tacos including kangaroo chilli with cherry tomatoes, coriander and feta, or watermelon and goats cheese with pistachio and red wine vinaigrette. The restaurant serves modern classics, such as rib eye, fish and chips and nicoise salad, plus there’s an epic Sunday lunch menu on offer, too. The bar has an extensive cocktail list, in fact, they house a cryogenic freezer used to freeze alcohol at minus 60 to serve up creations such as Lady Rhoden’s Fella Repella, a gin flight of selected gin and tonics served frozen, and Impossicones which combine strawberry shortcake and mint chocolate in an ice cream cone. The gin bar offers 63 gins from around the world in a relaxed setting with nods to Mancunian heritage to peruse whilst you work your way through them.
